Not only are they simple to make, but they're also a healthier alternative to traditional cookies with less sugar and healthy fats from peanut butter. Start by preheating your oven to 350˚F (175˚C). Line a baking sheet with parchment paper to prevent sticking and ensure an easy cleanup.
In a large mixing bowl, combine ⅔ cup of creamy natural peanut butter, ⅓ cup of maple syrup, and 1 tsp of vanilla extract. Stir until the mixture is smooth and well-blended. Next, add 1 cup of almond flour and ½ tsp of baking powder. Continue mixing until all the ingredients are thoroughly combined into a thick cookie dough.
Using a cookie scoop or a spoon, scoop the dough into 1-inch balls and place them evenly spaced on the prepared baking sheet. Gently flatten the balls with your hands or a fork, pressing them down to about ½ inch thick. This will give your cookies their signature shape and texture.
