These energy bites taste just like a slice of apple pie! Made with just 4 ingredients, they come together in no time. They’re perfect for a snack any time!

Pumpkin spice is the go-to fall flavor, but fall is bursting with lots of flavor profiles. In my opinion, apple pie is an underrated fall flavor that deserves a bit more recognition. Cue easy apple energy bites: the perfect fall (or really anytime) snack!

These easy apple energy bites are made with just 4 ingredients and come in at only 75 calories each. With nearly 2 g of protein and fiber per bite, they make a nutritious snack. Plus, they’re vegan and gluten free. They also taste just like an apple pie larabar – YUM!

What You’ll Need:

  • Dates: help bind the bites together. I used deglet noor dates from Trader Joe’s, but pitted medjool dates would work as well.
  • Dried apple rings: preferably without any added sugar. I like the ones from Trader Joe’s.
  • Almonds: add protein to the bites. I used raw almonds, but other nuts like walnuts or pecans would be good as well. The total amount of nuts should bel 1 cup.
  • Cinnamon: lends a warm, enticing flavor to each bite. I like to add in a bit of allspice, too, to really get that apple pie flavor.

How to Make Easy Apple Energy Bites

First, you’ll blend all the ingredients together in a high-speed blender or food processor. Then, you’ll roll the mixture into balls. Finally, you’ll freeze for 15 minutes to help the bites firm up.

Tips for Making Easy Apple Energy Bites

  • Soak your dates in warm water for 10 minutes before using. This helps soften them up. Just be sure to drain the water before mixing in.
  • Use a cookie scoop to help you form the balls. I used a 1.5 tbsp scoop and sprayed it with coconut oil to help prevent the bites from sticking.

Storage Instructions

Store energy bites in the fridge for up to 1 week or in the freezer for up to 3 months. Personally, I think they taste delicious straight from the freezer. Don’t worry, they won’t be too hard to eat.

  1. In a food processor or high-speed blender, process all of the ingredients together until they are mostly broken up and a paste starts to form, about 5-8 minutes. You may need to scrape down the slides and add a few tablespoons of water to help things come together.

  1. Roll mixture into heaping tbsp-sized bites and place on a baking tray lined with parchment paper. Place formed bites in the freezer for at least 15 minutes to firm up. Enjoy immediately, or store in the fridge for up to 1 week or in the freezer for up to 3 months.

Note

*Walnuts or pecans may be good in place of/in addition to the almonds. The total amount of nuts should be 1 cup.

*If you don’t have allspice, ground ginger, nutmeg, cloves, or even cardamom can be used instead. You could also add up to ¼ tsp of any of these spices to enhance the apple pie flavor.
